Hit Dishes Of Mine

                   MUTTON BIRYANI(Thalapakatti Style)


Ingredients:

rice 2 3/4 cup
water rice 1:2 ratio
mutton 1/2 kg(actually equal amount of rice and mutton)
ghee
sesame oil
cinnamon stick 1
cardamom 1
cloves 2
bay leaf 2
ginger,garlic,1 cardomom,1 clove,1 cinnamon (grind to paste)
onion 2
tomato 1 1/2
curd 2 tsp
lemon few drops 
mint leaves
coriander leaves
chilli powder 3 tsp
salt

Method:

1.soak basmati rice for 30 min
2.grind ginger garlic and spices to a fine paste.
3.cut onions length wise.chop tomatoes finely,chop mint and coriander leaves.
4.heat ghee and sesame oil in cooker add cinnamon,cardamom,clove,bay leaf.
5.Add onions and fry till golden brown and then add ginger garlic paste and fry.
6.add tomatoes and leave it to boil.once it boils add chilli powder followed by curd ,lemon and then add the mutton and fry well.
7.once it fries well and oil oozes out add mint and coriander and close again.after few min once it leaves oil add water double to rice quanity and add salt.close the lid and leave 5 whistle.
8.After all whistles over taste ad check for your spice and salt level and then add rice.
9.close the lid and leave to boil for 5 min. then close the lid tightly and keep a tawa underneath and ut the vessel in dum for 15-20 min in low flame. you can even keep hot water big vessel on top for a quicker dum.
Mix well and serve hot.

Note:
1.add chilli powder according to your spice level.
2.finally you can add saffron and red food color powder in hot milk and pour few spoons on it and stir.
