             CURE COLD WITH BETEL LEAF




  Betel leaves can be used to treat many ailments in our body as it has many anti fungal properties and much more. Here,we will just see how it is used since ancient times,to cure cold,both in adults and children.



Ingredient:

Betel leaf-1


Directions:

-Inner treatment:
*grind the leaf to a fine paste and have it everyday until your cold gets cured.



-Outer Treatment:
*grind the leaf to a fine paste and apply it on chest,neck and also back (optional) to get relieved from chest congestion.
* for kids you can either apply the paste the same way or prepare it as a balm as detailed below.

AS BALM FOR KIDS:

Ingredients:


Betel leaf-1
camphor-a pinch
coconut oil-few drops

Method:

*Take a bowl and mix betel leaf paste or extract with camphor and coconut oil.
*just heat it for very few seconds(less than 5).
*apply this warm balm on kids chest,neck and back before bedtime.
*this can be also applied to adults and everyone can have a congestion free deep peaceful sleep.

Drive Dandruff Away!

                                                          Cure for dandruff or any allergy on scalp!



INGREDIENTS:

Sesame oil 2 or 3 tbsp
black pepper powdered 2 pinch 
garlic -2 clove






METHOD:

1.Heat pan and add the drops of oil.
2.smash the garlic and add it to oil followed by pepper powder(a pinch is using first three fingers)
3.Keep frying it until the garlic seems roasted and hard.
4.bring it to a boil,keeping the flame medium to low.
5.Now once it becomes little thick and creamy stop and apply on head when its warm.
6.let it be on scalp for few fifteen minutes and then have a shampoo wash.

Apply it on scalp for four weeks continuously.You will be freed from dandruff or anythings bothering your scalp.This is a tried and true method we did at home.So without a second thought go ahead and do it!
*You can also store the oil with or without filtering.
*If the garlic is not fine roasted and remains soft it might produce fungus when stored in bottle.
*But if you do it fresh whenever needed it has more effect.
*You can add more oil and increase little bit of pepper and garlic according to the level.

Hit Dishes Of Mine

                   MUTTON BIRYANI(Thalapakatti Style)


Ingredients:

rice 2 3/4 cup
water rice 1:2 ratio
mutton 1/2 kg(actually equal amount of rice and mutton)
ghee
sesame oil
cinnamon stick 1
cardamom 1
cloves 2
bay leaf 2
ginger,garlic,1 cardomom,1 clove,1 cinnamon (grind to paste)
onion 2
tomato 1 1/2
curd 2 tsp
lemon few drops 
mint leaves
coriander leaves
chilli powder 3 tsp
salt

Method:

1.soak basmati rice for 30 min
2.grind ginger garlic and spices to a fine paste.
3.cut onions length wise.chop tomatoes finely,chop mint and coriander leaves.
4.heat ghee and sesame oil in cooker add cinnamon,cardamom,clove,bay leaf.
5.Add onions and fry till golden brown and then add ginger garlic paste and fry.
6.add tomatoes and leave it to boil.once it boils add chilli powder followed by curd ,lemon and then add the mutton and fry well.
7.once it fries well and oil oozes out add mint and coriander and close again.after few min once it leaves oil add water double to rice quanity and add salt.close the lid and leave 5 whistle.
8.After all whistles over taste ad check for your spice and salt level and then add rice.
9.close the lid and leave to boil for 5 min. then close the lid tightly and keep a tawa underneath and ut the vessel in dum for 15-20 min in low flame. you can even keep hot water big vessel on top for a quicker dum.
Mix well and serve hot.

Note:
1.add chilli powder according to your spice level.
2.finally you can add saffron and red food color powder in hot milk and pour few spoons on it and stir.

                                              Chicken Pepper fry

 


Preparation Time:10min
Cooking Time:30 min
Serving:4

Ingredients Needed:


Chicken 1/2kg
Onion
Tomatoes
ginger
garlic 7 gloves
curry leaves
fennel seeds1tbsp
cumin seeds 1tbsp
chilli powder 3tbsp
pepper powder
cumin powder

To Temper:

oil
fennel seeds 1/2tbsp
cumin seeds1/2tbsp
curry leaves

Preparation and cooking:


1.Cut onions,tomatoes and garlic ginger.Wash chicken and marinate half of cut onions,tomatoes,3 garlic curry leaves.
2.make a paste of ginger and garlic and take some out for tempering.in remaining ginger garlic add fennel seeds,cumin seeds,turmeric owder and add this paste to the chicken.Also add one spoon of chilli powder.
3.Meanwhile add oil to the pan and add things under "to temper " and add onions,ginger garlic paste,curry leaves,tomatoes in order after raw smell of ginger garlic goes off.
4.Now add the marinated chicken,chilli powder,salt and water and close the lid.
5.when chicken gets cooked and oil leaves out open the lid and keep stirring by adding
pepper powder and cumin powder.Half spoon of cumin powder is enough.Add pepper according to your spice level.
6.garnish with coriander leaves and switch off.

                                                    NEI KOZHI

One among our all time favourite chicken recipe.This recipe is made with ghee which makes it more delicious and more different which lasts in your tastebuds the whole week :)

Preparation Time:10min

Cooking time:30min

Serves:4-6

Ingredients needed:
ghee
cinnamon stick 1
cardamom-2
cloves-2
fennel seeds-1tbsp
onion-2 medium sized
tomato-3
ginger garlic paste
turmeric powder
pepper powder-2tbsp
chilli powder-3 tbsp
salt as needed

preparation and cooking:


1.Cut onions,tomatoes and chicken.Make puree of tomatoes and keep it aside.

2.fry cinnamon,cardamom,cloves in little ghee and powder it.

3.pour ghee in the pan and add fennel seeds.Then add onions and ginger garlic aste and fry till the raw smell goes off.

4.now add the chicken pieces give a good stir and close the lid.

5.After few minutes add the powders(add spice according to your level)and then the tomato puree and close the lid.

6.after five minutes the chicken would have left some water and keeps boiling.Now add the ground cinnamon powder,check for salt and add required water and close it again.

7.Finally when the chicken has cooked and ghee leaves on to add coriander leaves and switch off.

Yummy mouth watering neikozhi is ready. This taste is unbeatable with rice,roti,paratha,idly,dosa etc.

                                         POTATO KURMA FOR POORI
                               (WITHOUT TOMATO)

                This is a very tasty and easy kurma for poori,chappathi,idly,dosa,rice too.You need not add tomatoes and i bet you will get hugs and compliments from your loved ones who taste it!




preparation time:10min
cooking time 10 min
serving:4

Ingredients Needed:

cinnamom stick-1
cloves-2
bay leaves-1
big onion-1 medium size
ginger garlic paste 1 tsp
carrot-2
potato-2
chilli powder-2 tsp
coriander powder-2tsp
turmeric powder-1/2 tsp
curd-1tbsp
coconut
cashew-5 nos
garlic 3 nos(optional)
corainder leaves
salt as needed

Method:
1.Cut all vegetables and make a paste of coconut,cashew and garlic and keep it aside.
2.pour oil in the pan and add cinnamon,cloves,bay leaf.
3.Add onion,ginger garlic paste and fry till the raw smell goes off.
4.Add all the powders,turmeric,chilli,coriander and add the vegetables and give a good stir.
5.Now add a spoon of curd stir it again and then add coconut cashew paste and add sufficient water .
6.check for salt and close the lid or pressure cook for 2 whistles.
7.garnish with coriander leaves once opened.

Your delicious kurma or gravy is ready!

Note:You can add chilli powder according to your spice level.taste it before you put on the whistle.you can also add any vegetables along with this and try.
